The no.1 cause is contaminated salads, so wash your salad greens properly before serving them, even the prewashed & bagged stuff from the supermarket.

No.2 is improper grilling on the BBQ, we've all been there, charred sausages or chicken wings still raw on the inside  but we still wolf down after a beer or two.

So here is our guide on using a charcoal grill properly, getting succulant tastey food which won't send you to A&E a few hours later.

First choose your Barbecue Grill.

Charcoal grills are  is triciker to use than than Gas as the tempriture is more difficult to control, throwaway and cheap grills are nearly impossible to regulate and are only suitable for the most basic cooking.

My advice if using these is precook your food and then finish on the grill to get some smokey BBQ flavour.

I cannot understand peole who buy charcaol grill then use briqettes or smokeless fuel on it.

Using  a charcoal grill is all about the taste and you will only get that using charcaol, you can add to the taste by using varuis flavored woods such as apple, cherry or sweet chesnut.

 Do not use pine, it may smell nice but pine resin smoke will taint your food.

Most big brand commercail charcoal is Imported and is ripped out of the enviroment casuing destruction of habitats and contribtes to the trsahing of our planet  it is  also  coated with flame retardent chemicals to make it safe for long distance transport.

Always use locally sourced sustainable lumpwood charcoal such as made by Oxford Charcoal. Or take a look at the Grown In Britain Website for a charcoal producer near you.
